Yes, I caramelise onion & garlic in a little butter and then add in the chanterelle. Pour in homemade chicken stock, bring to the boil & add salt & black pepper to taste & simmer for 15 mins. Take off the heat, blend & add cream & sprinkle parsley!

I got a portion out of the freezer today - tomorrow's lunch sorted!
